Tasting Notes: Deep red color, aromas of fruit, potpourri, ripe cherries, ripe raspberries, wild strawberries and notes of plum combined with a floral touch alongside cinnamon and vanilla. Winemaking The grapes are destemmed and placed in stainless steel tanks to ferment and macerate for 14 days. The wine is then pressed and spends 3 months in the tank, where it undergoes malolactic fermentation prior to bottling. Vineyards are located in San Martin de Unx, a tiny village in the Baja Montaña sub-region in the northern region of Navarra. Old garnacha vines from lime-rich soils are located at 700 meters above sea level. The Atlantic climate reaches this small region which contributes to its unique and distinctive character.
**Fun Fact: The term “Lagrimas del vino” in Spanish translates to “Free Run”, referencing the juice that runs from the tank upon first opening it after fermentation is finished.
About the Producer
Bodegas Bhilar is a boutique winery located in Elvillar, Rioja Alavesa, run by husband and wife team, David Sampedro and Melanie Hickman. Their goal is to make terroir-driven wines with soul, to respect the land, to work only with indigenous grapes, and to share their unique wines with good people with positive energy.
In 1999, David started learning about the biodynamic philosophy and changed how he cared for his vineyards. First, he converted to organic farming and then began following tenants to recover the harmony between man, earth, vines, and cosmos. In 2014, tractors were eliminated and horses were brought back to farm the vineyards.
