This is not your traditional "prosecco". Mostly because its made in a "metodo ancestrale" method, which is a winemaking style that predates the infamous "champagne method".
Made using the same "Glera" grape as with traditional prosecco, but in a "Col Fondo" winemaking style. This technique creates a more rustic, textured and complex character. Crisp, dry, refreshing with lively acidity, green apple, stone fruit and white flower notes.
All grapes are from a single vineyard expressing the unique characteristics of the vineyard's terroir. This is a great option for those who crave a more elevated prosecco experience. And yes, you can still pour this to make a lovely mimosa for your Sunday brunch gathering - everyone will enjoy it!
