Winemaking 40-year average vine age for Macabeo and the Sauvignon Blanc was planted in the 1990's. 2500ft elevation. Hand-picked, de-stemmed into stainless steel for native co-fermenation of Macabeo and Sauvignon Blanc. 24 days of skin contact with four pump-overs per day. Free run wine is pulled into another tank and aged on the lees for 6+ months. No additions except SO2. This wine is unfined and unfiltered, which is suitable for vegans.

About the Producer
Bodegas Coviñas, the vineyard and land from which Kiki and Juan wines are created, was founded in 1965 and is a union of the area’s most prominent landholders. Bodegas Coviñas has always strived to take care of the people of Utiel Requena, paying top dollar for the highest quality fruit - becoming the foundation on which the region survives and with a desired destiny of quality fruit from the locals.
Winemakers for the KiKi and Juan production are Luis Miguel Calleja & John House -aka- Juan Casa and Kerin “Kiki” Auth Bembry. “Kiki” uses her long-standing relationships with grape growers in Spain to find the organic vineyards that OVUM winemaker “Juan” uses as his muse to create low-intervention wines. Native fermentation in cement, amphora and stainless steel + nothing added except sulfur - the goal with Kiki & Juan Wines is to make simple, fresh wines from old fashioned techniques.
